      Great Day Kitchen, 5/29 - Braised Baby Artichokes

      Chef Jen Van Fleet of Vino & Friends visited the Great Day Kitchen to prepare Braised Baby Artichokes in honor of the Castroville Artichoke Food & Wine Festival this weekend in Monterey County.Vino & Friends will be serving this dish at their restaurant this weekend too.Ingredients:1 dozen Baby Artichokes1 Lemon, zested and Juice1 Tbls Thyme1 Tbls Garlic, minced1/2 Roasted Red Bell Pepper1 Tbls Capers1/2 Red Onion, small dicedPinch of Red Pepper Flakes1/2 bunch Parsley, rough chop1/2 cup Olive Oil1/2 cup Dry White WinePreparation:In sauce pot heat oil.Add remaining ingredients except the wine.Saute for 3-5 min.Add wine and cover.Place in 350 degree oven for 10-15 min, or until fork tender.Click here to learn more about Vino & Friends.
