Chef Ranjit Donsanjh, from Elephant Lounge, located in Clovis, visited the Great Day Kitchen to prepare some delicious food.

Malai Chicken Kabob


Ingredients:

  • 1 pound chicken
  • teaspoon malt vinegar
  • garlic cloves-garlic paste
  • 1" ginger ground to paste
  • 1-2 teaspoons of Greek yogurt
  • 50 ml of heavy cream
  • 1 teaspoon of corn flour
  • 1 teaspoon of green chili spice to taste
  • 1 teaspoon of chopped coriander leaves
  • salt to taste
  • melted butter for basting (optional)


Elephant Lounge Bar Manager John Mcmillian showed us how to make some delicious drinks to go with the Malai Chicken Kabob.

Limca Mojito Drink


Ingredients:

  • 8 ounces of club soda
  • fresh mango puree
  • 5-8 lime wedges
  • 2-3 lemon wedges
  • 8-10 mint leaves
  • pinch of kosher salt
  • pinch of black pepper
  • pinch of chat masala


Love Lamp Drink


Ingredients:

  • Dried cranberry raisin
  • 1/4 ounce Chambord
  • 1/4 ounce cranberry juice
  • 5 ounces of champagne
