Chef Ian Cookson, from The Vineyard Restaurant located in Madera, visited the Great Day Kitchen to prepare some delicious food.


Mushroom Toast


Ingredients:

  • 4 slices thick cut ciabatta bread
  • 5 cups wild mushroom (if available)
  • 5 cups sliced button mushrooms
  • 1/4 cup sliced onion
  • 1 teaspoon chopped garlic
  • 1 teaspoon white wine (your preference)
  • 1/4 cup sour cream
  • Salt and pepper to taste


Spicy Duck Tacos


Ingredients:

  • 1 white Peking duck breast
  • 6 corn tortillas
  • 1/4 cup kimchi
  • Pickled onion
  • Fresh coriander leaves
  • 1 teaspoon Sriracha hot sauce
